It is traditional in Asian countries to put the wife's dates and the husbands on both headstones, so the 1980 date might very well be Sun's. But that would not explain why her date of death would not be the crash date like Jin's. Unless part of the deal of the Oceanic 6 (assuming they are given a deal) is that since Jin stayed behind they use the date of the crash as his death. But I cannot imagine him not coming back with Sun.
