Since I eat LOTS of chicken breast, I was really happy to stumble across some drastically marked-down packages of it the other day - $200 pesos worth for $60 pesos!

(Which is about 2.5 kilos which is about 5.5 lbs for $6 US).
Anyway, the "catch" is that it's what they call "milanesa" meaning it's sliced down to about 1/4 inch thick. Down here, they just throw it on a grill with lots of oil/lard and fry it up quick (usually a bit overcooked and dried out), however, that is not exactly on my diet.

Most recipes I find are breaded and fried, which I wanna steer clear of too.
Can you come up with a way to roll it or stuff it with something healthy or casserole it or otherwise make a tasty, healthy dish out of a good portion of it?
I've got 15+ lbs of it... I better find a way to love it!
