Marinade it (olive oil, garlic, bay leaves, chillies, Worcestershire sauce, a touch of tomato puree, salt and pepper) grill it, cut it in strips, make some
pico de gallo (you can add
tomate machacado to it so as to make it juicier, and also some capers or chopped olives) and make tacos.
Add a dressing made of mustard, olive oil and orange juice and you're laughing.
