Not sure how readily available these ingredients are for you but ...
4 – chicken breasts, pounded and flattened
1 pkg frozen spinach, drained of all liquid
1 package mushrooms, sliced or chopped
3 cloves garlic
1 bunch green onions, sliced, from white tips, into the dark green
4 ounces feta cheese
1 tbsp olive oil
Paprika
Garlic Powder
Onion Powder
Salt & pepper
Using the back of a large spoon or meat tenderizer, pound & flatten each breast without splitting them
In a medium skillet, sauté the garlic, mushrooms and green unions until tender
Add spinach and drain all liquid from ingredients
Add the feta cheese and salt & pepper to taste and mix
Sprinkle one side of each breast with a little paprika, garlic powder, onion powder and salt & pepper
Then Place about ˝ cup of mixture on each breast and spread over the breast
Roll the breasts up, and keep closed with a toothpick if necessary, and place on a baking sheet
Then once each one is rolled, again, sprinkle each with paprika, garlic powder, and onion powder – don’t do the salt again, might be too salty
Bake at 350 for about 20 minutes or so, depends on thickness of breast, check after about 20 minutes
