Chili
My usual chili recipe is very similar to others with a few variations. I use roasted garlic (rub clove with olive oil stick in oven for 15 mins at 350). I'll roast the peppers on the grill before I cut them and toss them into the pot and I use ground turkey instead of beef (It's that cholesterol and fat thing). A cup of fresh orange juice. Not quite sure why I put it in there but everyone liked it.

As a result of this thread, I felt a pang of guilt seep in when I added the beans to my chili last night.......
But I guess that's okay since it's the same recipe I made for last year's Superbowl, and they asked me to bring it again for tomorrow's Patriots win!! P.S. I guess Betty Crocker must've been a Yankee cuz it's her recipe!! ![]() |

Chili is one of my absolute favorite foods. I'm sharing my chili recipe... with the disclaimer being that the measurements listed are merely guestimates on my part since I never measure anything. Primarily because I learned to cook in a local deli that also did catering and made most items from scratch. The first thing I had to cook was a meatloaf... I freaked when I saw that the recipe only listed the ingredients and cooking instructions... but no measurements whatsoever. When I asked the owner's wife about the measurements... she couldn't tell anything other than we don't use measurements. So that is how I learned to cook... and also may be the reason why I'm such an awful baker (since more precise measurements are required). You southerner's will probably consider it Damn Yankee Chili because since my preference is to use beans... anyway, here it is...
Denise's Damn Yankee Chili 1 lbs ground beefCook meat in large cast pan. Transfer meat to large cast iron pot or dutch oven. Reserve fat in frying pan to saute vegetables listed below in same large cast iron pan. 2 green bell peppersWhen vegetables are translucent, transfer into large cast iron pot/dutch oven with meat. Then add the following items to the large cast iron/dutch oven. 16 oz can crushed or pureed tomatoesCombine above ingredients with meat and vegetables mixture. Bring to a very slow boil (stirring on occasion so it doesn't stick to bottom of pot and burn), reduce heat and simmer stirring occasionally for 1-1/2 hours. |
