I would think that you should be able to find some pretty decent mexican food in Pueblo! I go to the Pueblo chili festival every year and there are some restaurants represented there with small booth's selling great food. If you have never gone, you should try it. Great food, live music, fun!
And the best part, you can get chili and pinto beans while your there. We usually get a bushel of chili and 5 pounds of pintos to get us through the year.

top eats
First, I must be loyal to my little local spot...La Mixteca in Plover, Wisconsin. We waited many years for something beyond the usual gut-bomb ground beef burrito joint, and when La Mixteca opened their grocery and restaurant, we were thrilled. The owner is from Morelia, and his wife is a gringa, so this is not tex-mex at all. Their barbacoa is my favorite, and they make great tamales, pico de gallo and guacamole for carryout.
Next, Chicago. Just this week we were down there, and Mr. Tim chose Rick Bayless's Topolobampo for his birthday dinner. This is Mexican, but it is also haut cuisine. What an amazing meal. I started with a trio of ceviches from different regions, each served in a martini glass. What fun! To drink, I tried their special margarita made with raspberry juice and jamaica (hibiscus). Yummy! I ate rare duck breast with huitlacoche tamales that were as light as angelfood cake. The sauces were so complex. It is important to remember that there is such a thing as Mexican gourmet food. We have also enjoyed Frontera Grill, but I like the atmosphere at another Chicago restaurant, Salpicon better. Could it have to do with their tequila selection ? Ate at some restaurants in Little Village years ago, can't remember their names but they were great. And last of all, given time and inspiration, I can make excellent chiles en nogada. Poughkeepsie,NY a little hole in the wall place called "Mole Mole".You feel like your in Mexico. very good food and not expensive.
Hudson,NY "Mexican Radio". This one is going to cost you a bit,but its worth it .The food is great and the have a very extensive tequlia list. |

My wife was visiting a friend in Houston, and her friend annouced that they were going to a very authentic mexican restuarant. On and On, how wonderful and unusual and truly authentic. My wife was game, and since Houston is alot closer to Mexico than Indiana, there must be some really great mexican places. Turned out to be a Don Pablo's.

Minneapolis/St Paul is developing great areas with authentic Mexican influanes. I tried Villa Pancho, on Nicollet and 24th in Mpls. Was very good. I had a red snapper, others tried shrimp dishes and shrimp tacos. Very good. Price range is $7-$15.

Locally there is a little Mexican-owned "all you can eat" place that moved into an old Chinese restaurant. Has a mix of the Chinese and Mexican decor (to get rid of some of the Chinese stuff would be pretty extensive of a renovation). Very authentic, fun little place to go. My husband and I are sometimes the only non-Hispanics. |

There are a bunch of good Mexican restaurants in the Denver area - too many to list. Among my faves...
4G's - the one on South Federal is really good Hacienda Colorado - more Tex Mex - but good Guadalahara - near Kipling & C470 Tosh's Hacienda In Colorado Springs: Señor Manuels - really good!! I know the food in PDC is different than what we get up here - but Colorado has a huge Hispanic population, so we get some goods eats up here. And Mexican food is about my favorite... dave |
