I would think that you should be able to find some pretty decent mexican food in Pueblo! I go to the Pueblo chili festival every year and there are some restaurants represented there with small booth's selling great food. If you have never gone, you should try it. Great food, live music, fun!
And the best part, you can get chili and pinto beans while your there. We usually get a bushel of chili and 5 pounds of pintos to get us through the year.
