Actually Tacos Arabes is the original name this kind of food should be remembered as. But "al pastor" is the common name in central Mexico. For example in Monterrey they are known as "Tacos de Trompo".
The way to cook the meat in a vertical roticery is not Mexican in it's origins,you can see the same idea in Greece. The thing that made the "al pastor" different, in my opinion is the pineapple on top of the roticery, and specially the sauce to marinate the meat, in the mayoritiy of cases it contains Achiote for flavour and colour.
The "tacos arabes" in Puebla and Mexico city (there are a couple of the same "chain") do not have Achiote nor pineapple.
