Had "swai" fish, discovered it in the grocery store recently, very good. And cheaper than catfish, talapia, snapper, etc.

Pre-heat oven to 500 deg.

Coat w/ olive oil, season ( I use a blackened seasoning + garlic powder), squirt of lemon juice, wrap in foil. You like it hot, add a little sprinkle of cayenne pepper.

Bake 7 minutes.

Turn oven off, let sit 3 more minutes in oven.

So far, perfect every time.

2.5 pound bag of fillets, $10 at Wally World.

Yes. Oregon giant rock scallops. There are sea scallops and bay scallops. Bay scallops being the smaller of the species. Most markets carry both. They are plentiful and fairly inexpensive. We eat them often.

Chilly, crappy, rainy.....so a home made chicken soup/stewish thing with some fresh asparagus and a few wild leeks thrown in and some jalapeno and xxx cheddar stuffed cornbread... maybe some guac and chips too....

Making a red clam chowder for supper with crusty bread.

Tomorrow will be in the garden all day and plan on a barbeque chicken, roasted potatoes on the grill and the last of our aspargus.

I'm up early preparing for my pre-Mom's Day Taco Fiesta. I've got ground beef and my brother is smoking a pork shoulder. Soft and crunchy shells. Guacamole, salsa, Spanish rice, toppings, layer bean dip, and tamales. Beer, wine, and spirits. The whole family's coming in addition to a few friends.

I'm also making a black cherry jello cake with cheese cake frosting topped with fresh raspberries. My last jello cake at Easter was such a hit, and this is about as close to baking as I get. Me and a box of Pillsbury.

My lilacs bloomed late and I cut some; the whole living room smells like lilacs and cake batter. It better not rain because all these people won't fit in my tiny house!

That sounds yummy, Mel.

We went for Jamaican/Caribbean food last night, I had the chicken in a West Indian yellow curry sauce with green apples and roasted potatoes and veggies, and Don had the jerk pork. Starter was a playe of Johnny cakes with ot sauce or banana sauce.

Washed down with a couple Red Stripes and I had a bite Of Don's Key Lime pie for dessert, mmmm!

Tonight we are taking his mom out to dinner for Mothers Day and then going to his sisters' 25th wedding anniversary party.
