Don't know what they'll do -- some places are more concerned and vigilant about this than others -- but it is generally considered bad form, analagous to bringing your own food & drink to a restaurant. Every place that operates (legally) on the beach pays a considerable concession fee to the government to do so. I suppose if you push the question they may not be able to restrict your consumption of your own food or drink within the area where they operate as long as you're on the beach and thus in the zona federal, which means certain priveleges are guaranteed to the public. However they can certainly refuse to serve you or to allow you to use any of their loungers, umbrellas, palapas or what have you, as all those things would remain their property and part of their business.

FWIW!

maybe if you move yourself a little to the north past Mamitas, same beautiful beach, and don't use Mamitas services, like bathrooms, you could take your own.

Mamitas does charge you for the Chairs and palapas. Some of the others will not charge you for that as long as you buy something from them like drinks or food.

I didn't like that, so we never went there. Call me cheap or whatever, but I figure if I"m buying drinks and food, I should get to use the facilities, not have to pay to sit in a chair too. So if we didn't feel like bringing our own to the beach and wanted to sit in some nice loungers, I'd prefer to go somewhere like the Playa Maya, or El Pirata where I can just buy food, drinks and sit in a lounger comp.

Sure you can, just drink it before you get there, then nobody will know!
On the other hand, the Mamita's folks are just trying to make a buck or peso.
Let's help each other,in the words of the sage Dr. Bill Lone.

At El Pirata you can bring a pizza and a coffin size cooler full of beer if you like. These guys are great! Ask for Armado, Pedro or Ruben.

I know that Tukan Beach club has a cooler charge posted on their sign. Or they did, anyway.

At Mamita's coolers are not allowed. The day Seakony brought a cooler which we needed for the Beach O-Limp-XX, nobody said anything. Usually I bought my water at Mamita's though (and the Margaritas too). It's not so expensive anyway so why should I try to save a few pesos when they are only trying to make a living?

The last time I sat at Playa Tukan to read my newspaper in their shade I just paid for a coke and they were cool with that. If they had charged me for the chair I would have handed back the coke. I did actually ask “Can I sit here if I just order a coke?” The reply was a quick and friendly “no problem”.

Yes, that would be "no coolers."
