Ripe Pineapple
DAK had big ole ripe pineapples on sale for 80 cents each yesterday so I bought one. I can't eat the whole thing before it gets a little too overripe. Anyone have any ideas what I can do with a big 'ole juicy fresh pineapple in the next day?

I think you just need to buy some chips. Because a ripe pineapple sounds like the beginning of some sort of blenderized fruity alcohol-based concoction. Something pina-colada-ish...??? Which of course would lead to a party... and you always need chips at a party.....

Here are some suggestions: You can cut it up and freeze the rest of it in ice cube trays and then pop each one of the cubes into Sangria, or what ever fruit punch you like. Yummy....makes the juice cold at the same time it adds lots of flavor, long after the pineapple season has passed. You can also make it into salsa--cut it up into really small pieces, add chopped onion, jalapeno, mango and serve it on fish or chicken (or on chips). Cut it in chunks and put on skewers and barbeque it with veggies or chicken. Hope this helps! -Bonny |

All wonderful ideas! Thank you all! I didn't realize pineapple could be frozen, so I think I'll go that route with some of it, and maybe the salsa route with the rest. (I've got mangos, too!) PJ - thanks for thinking of me; ya shoulda stopped by! And Bonny, no kidding on the price - one of the biggest perks about living here! I look at those Bob Esponja pictures and laugh every time... what a fun day that was with all of you! And Marie, dear, it would be a party of one today... rain is pouring on my palapa... I'd probably nap through my own party, anyway!
