First off, I'm in the Minneapolis/St. Paul area and fly to Cancun on a semi-regular basis. The cheapest way to get there from here is on one of the three charters; MLT Vacations (aka Worry Free Vacations), Trans Global Vacations, and Sun Country. The last three trips, I used Worry Free Vacations because they were the cheapest and I could book online. I took the liberty of checking your desired date Thursday, May22nd and the price is $397 (including all tax). That seems to be the going price for the second half of April and all of May. For last minute travel, leaving in the next two weeks, I'm seeing prices at roughly $250 (including all tax). So, you could pay the current fare or gamble and see if the prices drop about two weeks before your departure date. By the way, the specials from Worry Free Vacations that start surfacing late Monday night, DO NOT INCLUDE the tax which is in the range of $100.

Locally, its difficult to book TransGlobal or Sun Country via the web, so you'd probably want to check with a local travel agent like Hobbit Travel. They are probably the most active agent in the state and they have a website where you can check their specials, which change daily Monday through Friday.

Also, forget about using Northwest or Continental (or any other commercial carrier) to get you to the Cancun airport, even if you have frequent flyer miles. It takes about twice as long to get there as a charter (which goes direct) and you'll end up spending half your day somewhere like Memphis or Houston.
