Yes, James is right there are very different perceptions on traditions, guacamole is not a specialty or the main part of a snack, is just one more of the salsas available at the table.
Guacamole goes perfectly well in a Taco de Chicharron. Or if you are lazy or the tortillas are cold then you dip the chicharron directly on the guacamole. But you won't see mexicans ordering just guacamole.
