Lightbulb Sun-Dried Tomato Hummus with Slaw in Pita Recipe

When we were in Playa a few weeks ago, I had a conversation with someone about hummus and other middle eastern foods. But for the life of me, I can't remember if it was with Heather, Greek2Me, both of them or someone else entirely.

I happen to love hummus. I also happen to love sun-dried tomato. So you can imagine how thrilled I was when I happened upon a delicious recipe for sun-dried tomato hummus in Country Living magazine. Rather than taxing my poor old brain further (trying to remember who the heck I chatted with this about), figured it was easier to simply share the recipe with everyone here on the forum.

One last note... you don't have to make the slaw and or the pita sandwich... the sun-dried tomato hummus is good all by itself.

Sun-Dried Tomato Hummus with Slaw in Pita (from Country Living magazine, June 1994)
Sun-Dried Tomato Hummus:
Ingredients:
1 cup cooked chick peas (drained and rinsed if canned)
10 sun-dried tomatoes halves in oil, drained
3 T water
2 T lemon juice
1 T olive oil
1 clove garlic, coarsely chopped
1/2 t salt
Directions:
In food processor fitted with chopping blade, combine chickpeas, sun-dried tomato halves, water, lemon juice, olive oil, garlic, and salt. Process until chicpea mixture, or hummus, forms a smooth puree. Set aside.
Slaw:
Ingredients:
1 cucumber, peeled
1 medium sized carrot, coarsely shredded
2 red radishes, coarsely shredded
1 t cider vinegar
1 T olive oil
1/4 t ground black pepper
1/8 t salt
1/4 t sugar
Directions:
Cut cucumber lengthwise in half and seed. Finely chop cucumber halves and place in small bowl with shredded carrot and radishes. Stir in olive oil, cider vinegar, black pepper, salt and sugar.
Pita Bread Sandwich:
Ingredients:
Sun-dried Tomato Hummus
Slaw
4 5-inch pocket pita breads
8 leaves green-leaf lettuce
Directions:
To assemble sandwiches, cut each pita in half to make two pockets. Spread about 2 T of hummus in each pocket and top with one lettuce leaf. Spoon cucumber mixture into pockets so that it is separated from the hummus by lettuce (this will prevent the hummus from becoming soggy). Serve immediately.
Nutritional information per sandwich:
Protein: 12 grams
Fat: 10 grams
Carbohydrate: 55 grams
Fiber: 7 grams
Sodium: 713 milligrams
Cholesterol: 0
Calories: 355

Thanks for the recipe. Sounds great! We are having Middle Eastern food on Sunday... I think I'll try your hummus recipe. Thanks!

My 'slaw' is slighly different-it is a yogurt based one. I use 1/4 cup plain yogurt and 1/4 t dried dill, and omit the vinegar, olive oil and sugar.

1/4 t ground black pepper
1/8 t salt
1/4 cup plain yogurt
1/4 t dried dill
OKAY, NOW I AM HUNGRY......

Bonny, yours sounds equally good. More like a Tzatziki. Will have to give it a try.

I like to add some red pepper flakes in the hummus to make it a bit spicer. BAM!! Serve it as a dip with baked pita chips.

Yep-I think it tastes very much like that--more Greek in flavor...
