Fortachon

I just visited a new little hole-in-the-wall Mexican restaurant that just opened near my house. Most of the items on the menu were things I had never heard of. I got a dish called Fortachon. It's a pretty simple dish of strips of steak and ground chorizo cooked together, topped with Chihuahua cheese and served with corn tortillas. it was VERY MUCH like the food I had in PDC...moreso than other 'authentic' Mexican places I've been to. My girlfriend ordered something called Gabacha (I think) which was steak with spices, pineapple and...CHERRIES. Both were fantastic. Anyone ever heard of these things? Are they Mexican, of some other Latin American origin or just a creations of an imaginitive chef?

yeah...I just had the leftovers for lunch (at work...shame on me for being on here right?)

We also got a chance to practice our Spanish with a VERY patient waitress. I'm sure we were very entertaining.

gabacho, a is a noun that has the same meaning as gringo.

Those names are the product of an imaginative mind at work. Also each Torta stand gives a name to a certain combination, like Cubana was a little of every item on the menu in the past, now there are names like Rusa for a Torta de Milanesa (breaded beef) with Oaxaca cheese and ham, or Oaxaqueña for one with Chicken and Cheese, etc. the name varies with the restaurant and region.

The dishes are also imaginative as no one has used cherries so far.
The fortachon sounds a lot like Central Mexico or even the Northen part, but is not a very common combination, Choriqueso yes, but with beef not so much.

Certainly a cook to praise and enjoy.
