How about mu shu pork - that comes about as close to eating a taco with chopsticks as I can think of - but if those thin little Chinese tortillas can hold up to it, they make great finger food too (like a taco), so you might be able to 86 those troublesome (for me, anyway) chopsticks.

On a similar note, I've noticed Europeans eating a hamburger with a knife and fork (but not yet with chopsticks) - open the hamburger, lay the top bun and condiments (pickles, lettuce, tomato, onion, etc.) aside, then work each piece over with the old knife and fork like it was real food.

It does seem like one of those "unclear on the concept" moments (wasn't the Earl of Sandwich at least peripherally European?) when I have to czech myself from barging in with unsolicited culinary advice (Don't talk with food in your mouth! Chew with your mouth closed! - Hey, watch out with that knife and fork - I was only trying to "help"! It's a hamburger, for God's sake!). Bon appetite!
