Freezing hams
We were in SAMS last night and I saw several people buy three-four hams that were marked down half price (Christmas whole hams). I asked a couple of them what they planned to do with so many hams and they all answered:
FREEZE THEM FOR NEXT CHRISTMAS! Isn't that a LONG time to keep these hams???? Has anyone done this? I might try it for Easter, but Christmas??? ![]() |

I think any food handling expert would officially say 6 months is about the limit. But, I know that I have used meat that's been in my freezer for one and two years, with no ill effect.
Theoretically the ham is already cooked, so I don't know how much could go wrong. The only problem would be if the hams were shipped frozen, then thawed for sale, then the purchaser is intending to refreeze it. There may be some degradation in texture. Pile on that pineapple and nobody's the wiser! |

OMG! I just remembered that there's a ham in my garage freezer that's been there since last Christmas that I was supposed to make this Christmas, but never hosted anyone so we never had the ham dinner. My mom said it would still be okay since I had it all wrapped in layers of freezer type things. Hmmmmmm....

Funny this shoudl come up! I read this today in the Dear Abby section of the paper...
DEAR CONCERNED: According to Mike Herndon, media spokesman for the Food and Drug Administration, meat can be frozen "almost indefinitely." However, it must be stored constantly at zero degrees to be safe. Freezer burn does not make food unsafe, but may affect the quality. The following are freezer storage times for quality only: uncooked roasts, steaks or chops, four to 12 months; whole poultry, 12 months; poultry parts, nine months. Also, it's a good idea to check for odor after meat and poultry have been frozen for too long. If there is a rancid smell, obviously, do not use it. |
