I think that the quality of the pastor varies depending on what time of day you arrive and how many people are ordering it. If you get there too early, the meat hasn't had a chance to soak up all the juices that are dripping down. And if noone's eating it, the meat tends to get a bit too charred. I can tell if I'm going to like it just by looking at the spit. But that takes practice ... lots and lots of practice. Oh, it's tough living a few blocks away from great pastor. ![]() I like Carboncito's, but I prefer Fogon and Pastorcito. I just think that Carboncito's pastor is a bit bland. However, I do agree that the meat seems to be of higher quality. The first pastor I ever ate tasted just like Carboncito's (except it was in a total dive in Veracruz and cost less than 40 cents a taco), and I thought it was the best thing ever. When I first tried the pastor at Fogon and Pastorcito, I was a little disappointed. I guess they grew on me, though. Sometimes, I think you fall in love with something and then can't accept it any other way. My husband can't stand Carboncito's. We took our 2 foodie friends from Chicago there, and the ONLY thing they liked was the pumpkin seed sauce. They had been to Pastorcito before Carboncito's. Btw, to give you an idea of what our foodie friends like here, they love Pastorcito, Fogon, HC de Monterrey, Babe's & Il Pescatore (have been meaning to post on how great this place is). We have also taken a butcher's daughter and a picky guy who will spend hours picking every minute speck of fat off of his meat before eating, and they both loved the pastor and commented on the high quality of meat. Can you tell that I think about food way too much? Hope this helps. It'll be interesting to get Heather's opinion on Pastorcito next week.

If you want a plate of salsa boats with chips, you'll pay a couple bucks for that. One battles it's competition for the lowest priced al pastor in town, the other battles all comers for the best quality al pastor in town. On Pastorcitos, I know the family that runs this place. I usually go there instead of El Fogon when I'm eating in my neighborhood. We had our get-together/greet/meet dinner before our wedding there.
