Help me plan my menu...

I'm having a big party here to celebrate our wedding, sorta a reception...It is all beach themed and the colors are basically white, blue, teal, tan...The accents are sand, starfish, shells..
I'm trying to make it feel like the beach in Playa (Yeah I know good luck)
Anyhow since it is a casual beachy affair with NO caterer...I need easy food ideas that fit the theme and aren't super pricey for feeding about 60-80 people...
HELP!!! lol

I think you have to have Cerviche. Of course tacos pastor, chips and salsa guac. And Tequila and cervesas. And me.

We did our honeymoon in Banff. That's what about 6 hours from you?

Grilled garlic shrimp. I don't know what shrimp costs where you are, but if i buy them frozen, I can get a good price here.

Or better yet, plenty of tequila and it won't matter what you serve.

I think what you are doing is great. We try to recreate the experience here to. I left two week ago and I am already dying to go back.

The ceviche is a must. Good call. The best I had was on San Fransisco beach on Cozumel. Is the seafood just marinated in some type of citris? I know citris can sort of cook seafood. I'd like to make some myself.
And if you use our suggestion, are we invited?

I would do a BBQ....Maybe Salmon & Chicken? Costco has good prices on both....Then put out a bunch of salads, chips, salsa & guac......I did a cool fruit salad one time in a hollowed out pineapple....Maybe a self serve taco/nacho station?
Keep it simple.....You want to have fun...

Taco bar...sorta like a salad bar with all the fixin's. (Make yer own tacos)
Provide the tortillas, meat, shrimp, fish, and grilled vegetables for the fillers...and have lettuce, cabbage, tomatoes, cheese, onions, etc to go on top of that...guacamole of course...and you can get many different types of salsas to put on top. Some rice and beans on the side...and you are good to go.

Everyone is happy because they make their own taco combination...and the work is minimal for you. Minimal is good... so that you can enjoy yourselves too.

Kacee and Bonny provide a good option, it will really fill like Playa.
All sort of tacos, everyone prepares its own. NO caterert to worry about. You can ask some guy by the Bus Station to prepare the Cochinita for the day you need it. Ceviche is a little more tricky, you need a guy that really knows how to cook, but I don´t find it impossible to get a cart guy willing to prepare a bunch for you.

If you are going to do this all by yourself, for this big a crowd, keep it as simple as possible. Do you have a Costco or a similar bulk store near where you live? Usually at these places, they sell rolled beef or chicken tacos. They are pretty good. You can heat these up and put them in a container to keep them warm. Also, you can pick up chips, dips, veggies, munchies, and other edibles for your fiesta. Keep your beverages simple as well: sodas, beer, and margaritas. This party is for you as well, enjoy yourself!

Are there any taco truck where you live? Rolling Mexican food? If so, maybe you could hire one and let them make the food - your guests could order from the menu - but tell them not to drink the water

Huuu, I had to re-read the original message and I got it wrong (fast reading, my fault) I tought it was in Playa, so.....
I will keep with the ceviche idea, just need to practice and get a good recipe first. Then make tostadas, is simple but also you have to practice before to make them without overfrying. Use day old tortillas to make them and fry in medium hot oil, remove them as soon as they are brownish. You can also make totopos, cut the fresh tortillas in triangles and let them dry on the Sun for a couple days, deep fry and there you go.
Tacos are doable, depends on what kind of tacos you want, to be beach themed they should be shrimp or fish tacos. Not necesarily Oasis style, but having the small shrimps steam boiled and with some fresh salsa and limones would be 'nough, breaded fish fillet cut in small pieces again with salsa and limon on the side.

I have a friend here that make very good cerviche. Yes it is lime juice. Remember there are no lemons in all of Mexico or so I've been told.

I am not sure if you have a Moe's restaurant near you, but it is sort of like Mexican fast food, except not like Taco Bell at all. it is very good and they cater for real cheap. They give you everything you need for tacos, guac, chips salsa, burritos and even the containers to keep everything hot. I looked into doing this for my son's b-day party and is was not evpensive at all.
