Mike's still chilling in bed, but when he gets up, I'm making him a breakfast of Egg Beaters (cooked in a non-stick pan with a spray of Pam) with chives, cooked flat and then flipped to make sort of an egg "pancake" ~ 60 calories, 0g fat, 0g carbs, 12g of protein. The Egg Beaters "pancake" will be rolled up in 2 thin slices of smoked turkey breast ~ 100 calories, 0g fat, 0g carbs, 12g protein ~ lightly spread with 2 tablespoons Tofutti herbs & chives imitation cream cheese ~ 60 calories, 5g fat, 2g carbs, 1g protein. This rolletini will be sliced into little pinwheels. I'll dress the plate with a couple of halved cherry tomatos.

Basically this breakfast comes in at about: 220 calories, 5g fat, 2g carbs, 25g protein. Think this is a good way to start his day!

Mike and I have been going crazy looking up low carb recipes on the internet over the past couple of days. We've found ~ and had ~ some REALLY tasty ones! We also went shopping at both the local store we frequent and a really good health food store nearby. I've always been a label reader, but in the past, I've concentrated more on the FAT than on the SUGAR and CARBS. Some labels are REAL eye openers!

We've only been on the Phase One South Beach Diet for a couple of days, but it seems to have have given MY weight loss regime a big boost. I've lost 3 pounds so far this week ~ down to 129.8 this morning at 27.6 body fat. Not bad for a 61 year old broad! I'm also getting a GOOD daily workout with the Leg Magic machine program which I am now doing instead of walking.

Plain tequila comes in at ZERO carbs, so THAT's a good thing.

HC de Monterrey is a great choice as long as you forgo the potato and tortillas (personally, I don't do onions, but that would be a good sub if you like them). Lots of grilled chicken and fish to be had, just skip the rice. A "natural" margarita isn't bad (no sugar syrup, just tequila, cointreau and lime juice) or, to be safe, order a limonada con Canderel and a shot of tequila and mix it yourself. Always rum and diet coke. Oh, and I order my mojitos at Babe's made with Canderel instead of azucar as well. I don't think the sparkling water they put in them is sweetened.

On the bloody marys it depends. Most of the commercial preparations have High Fructose Corn Syrup (HFCS) in them.

I relax a little when I am on vacation. I drink some beer I eat some tortillas. I also walk a lot - but my main goal there is using the blood glucose rather than having it roll around my body in my bloodstream

Often, since Kathy is not diabetic, i will drink a couple of swallows of my wonderful, fresh-squeezed orange juice and give the rest to her.

Once or twice I have ordered tequila, a half a lime and a glass of ice and made my own margarita at the table with "azucar dieta", (Splenda is my preference). I either take down a ziploc bag full of packets or buy some when we get there.

Some of the Argentinian grill in and around Playa are also good choices. For upscale - Chicago Don Jose's has mighty fine steaks. You can tell them to hold the potato, or if one has enough self-discipline, you can get it and restrict yourself to 5 bites or fewer.

If I have more thoughts, I will pass them along - but a plan of consciously choosing lower carb places/meals and relaxing the routine a little can work.

Oh, now that I am on an insulin-sensitizing medication and well below the maximum dose, I may up the dosage a little whilst I am in Mexico. There is no danger of this med taking me too low and causing a hypoglycemic episode.

Mike had his Egg Beaters-Smoked Turkey-Tofutti Cream Cheese breakfast and said it's definitely a keeper. I agree! It tastes REALLY good! Sort of like cream cheese and turkey blintzes, but without the crepe.

On another good note, Mike has lost 3.4 pounds since Wednesday, so THAT has REALLY encouraged him.

That IS a VERY good thing...but I hear that it does unfortunately mess with blood sugar a good deal.

Yes, so I have been to Playa, and I am going back in a tad more than a month too. Oh how life sucks sometimes.

I haven't been to the gym in almost two weeks so right now my leg feels OK. I did feel it often when walking in the sand so I'd have to say I'm still back at square one. I might go to the gym tomorrow so I'll know more about how it feels then, or I might baby myself and not go, so I can choke the nicotine I ingested while in Playa out of my lungs first!

That is wonderful and the blood glucose number you posted are also It has been caught at a place where a progression to diabetes is avoidable.

The blood pressure and cholesterol information you posted - the combination of all these add up to metabolic syndrome. Some research is pointing to insulin resistance being the common factor to this syndrome.

The weight loss will help reduce insulin resistance (best described, perhaps, as insulin knocking on the cells' door, but the cells can no longer hear it so well ) It has a high probability of helping with all those issues.

I just checked this site out and it is great, thanks for posting. Many days I try to track what I eat, mostly looking to see where I am on calories & protein, but this way seems so much simpler than writing it all down, it calculates everything for me, and most brands and types of food are on there.
