Let's just say I feel it... and I didn't go to the gym today since I spent most of it loading the van... cardio and weights combined! Thank you SO much for getting me in there with you. It was fun (and it killed me )!

Big Lots doesn't take AmEx, so I actually spent my last penny there - LITERALLY! Couldn't buy as much as I might have since I had only $19.39!

i went to make a turkey roll up for lunch... upon doing a sniff test determined that the turkey was suspect ... so i was stuck with all this stuff on the counter... took the whole wheat tortilla and spread the low fat laughing cow garlic/herb cheese (about 1/3 of a triangle) on there, cut up some avocado slices, some tomato slices, some feta chunks and some low fat cheddar, rolled it up and it was awesome!! i love happy accidents!!

Mmmmm! That sounds yummy! Maybe I'll make one for lunch tomorrow. I just happen to have all those ingredients (minus the feta) in my fridge! BTW, did you know turkey breast has more calories than imported ham? I was surprised by that.

I did a really good dance cardio workout on On Demand tonight. It was with a woman with a Scandinavian accent. Man, she has some great abs! And she's a pretty good dancer. I like doing the dancing for cardio cuz it goes by so fast. And I really have to think. But the second or third time I do the same show, I can really pick up the steps. It's actually a FUN workout! I just wish they had some shows with regular songs in the background instead of just beats.

I've lost 3 lbs. and would like to lose 4 or 5 more, but then I'd have to buy new bathing suits and clothes, so I might be happy with one or two more lbs. It would be a lot cheaper! I'm VERY petite, so 3 lbs. for me is a whole size smaller.

Not lactose intolerant in the usual sense, but dairy does bad things to me (I wake up looking like someone beat me in the face and it causes respiratory issues also) and, for some people (especially those looking to get competition lean), it slows fat loss a lot). Yoga day had a good class. My first week weigh in at Weight Watchers...2lb gain not exactly what I expected tomorrow is cardio/weight @ the gym.

It was fun, I wish you could come with me every day! I LOVE the Bar class and like I told you, the more you take it, the more conditioned you get and after the first few times - no more ouchy! Come back tomorrow afternoon - there's another class!

I found a substitute for my addiction to peanut butter m and m's (my crack).....
Frozen blueberries, frozen cut up strawberries, and frozen grapes! Now why didn't I discover this 5 pounds ago?

I just had the yummiest breakfast! It's the healthy version of something called a Tortilla Española. They also sell these at the supermarkets in Playa, but those ones are too yummy to be healthy!

Anyway...

Healthy Tortilla Española


1 clove of garlic chopped fine
(original recipe calls for like a whole chopped onion but I don't do onions)
a fist-sized, partially cooked, cubed, red potato
1/2 of a 16 ounce carton of Egg Beaters
Seasoning to taste

I browned the garlic in a 10" skillet in Pam, then added the potato cubes and let them brown up just a little and seasoned them. Then I poured EggBeaters carefully over the top, not stirring, and let it all cook, covered, at low heat until the top was not wet. Slide it out onto a plate, respray the skillet with Pam, then flip it back into the skillet to brown the reverse side a bit. (This process didn't work real well for me since my skillet here isn't non-stick.)

EDIT: This should be one serving, nutritionally, for most people. It's a big plate of food, though, so be prepared!

Hey it's ago to admit we slipped a little. Me, I lost some muscle after my bike accident last year cut short my training for over 6 months due to injuries. I'm still regaining my old strength and actually hitting the slopes for the first time this season in a few hours if I can get my butt to bed!!

I LOVE Tortilla Española! I practically lived on it for two years in Spain (was a veggie at the time and it was a real strange concept for them - still is I think!). Used to get the BEST tortilla baguettes and sit on the sea wall....ah, those were the days.....and then I wonder how I got so fat! Yummmmmm.....

Hey Streckman! Good to see you back, glad you are well on the road to recovery! As you can see some stayed on the wagon, some clung on really hard, and some (ahem...that's me then!) got off and let it go round the circuit a few times without us!
