i went to make a turkey roll up for lunch... upon doing a sniff test determined that the turkey was suspect
... so i was stuck with all this stuff on the counter... took the whole wheat tortilla and spread the low fat laughing cow garlic/herb cheese (about 1/3 of a triangle) on there, cut up some avocado slices, some tomato slices, some feta chunks and some low fat cheddar, rolled it up and it was awesome!! i love happy accidents!!

I did a really good dance cardio workout on On Demand tonight. It was with a woman with a Scandinavian accent. Man, she has some great abs! And she's a pretty good dancer. I like doing the dancing for cardio cuz it goes by so fast. And I really have to think. But the second or third time I do the same show, I can really pick up the steps. It's actually a FUN workout! I just wish they had some shows with regular songs in the background instead of just beats.
I've lost 3 lbs. and would like to lose 4 or 5 more, but then I'd have to buy new bathing suits and clothes, so I might be happy with one or two more lbs. It would be a lot cheaper! I'm VERY petite, so 3 lbs. for me is a whole size smaller.

I just had the yummiest breakfast! It's the healthy version of something called a Tortilla Española. They also sell these at the supermarkets in Playa, but those ones are too yummy to be healthy!
Anyway... Healthy Tortilla Española 1 clove of garlic chopped fine (original recipe calls for like a whole chopped onion but I don't do onions) a fist-sized, partially cooked, cubed, red potato 1/2 of a 16 ounce carton of Egg Beaters Seasoning to taste I browned the garlic in a 10" skillet in Pam, then added the potato cubes and let them brown up just a little and seasoned them. Then I poured EggBeaters carefully over the top, not stirring, and let it all cook, covered, at low heat until the top was not wet. Slide it out onto a plate, respray the skillet with Pam, then flip it back into the skillet to brown the reverse side a bit. (This process didn't work real well for me since my skillet here isn't non-stick.) EDIT: This should be one serving, nutritionally, for most people. It's a big plate of food, though, so be prepared!
