Fajitas, a a quick and easy meal at our house! All I do is slice meat (chicken, beef or pork) into strips and saute them them over fairly high heat. When they are close to done I add strips of onion and peppers. Then I throw in a bottle of fajita sauce, readily available at grocery stores. I have tried lots of brands, haven't had a bad one yet. Voila, dinner is on. While I am cooking the filling, I throw tortillas wraped in foil in the oven on warm so they are ready when the filling is done.

Not sure about Mn, but we have a Mexican chain grocery store here called La Michocona. I always go buy there fajita marinada and add just a few more drops of worchester sauce, and freshed squeezed lime into the bag they place it in. I either get my tortillas from them or our local Kroger has a fresh made tortilla machine. Cook that meat on the grill outside & you can sautee onions & bell peppers too.

Grab a beer or margarita.
First choice of cut of meat to use is skirt steak. If not flank steak will work. Slice the meat across the grain, thinly, about 1/4 inch at the most. Season it with some juice from a lime. Let it sit while you heat a pan. Grab a beer or margarita. I usualy use a pan for meat and a pan for onions and peppers. I put a heavy cast iron pan in the oven and set it to 500 degrees. You want that pan as hot as possible. Then I take it outside to my grill that has been heated and is as hot as possible. Grab a beer or margarita. Throw the meat in and keep the lid of the grill open while you cook. You don't want to do this inside unless you have a fan that can take smoke outside. Keeping the lid of the grill open will help keep the pan from getting too watery. At the same time have another hot pan and cook the onions and peppers. Grab a beer or margarita. Cook the meat until done, sort of flipping once to get a nice sear on both sides. Then I season the meat and onions with some salt and pepper. Grab a beer or margarita. If you are trying to present them like at restaurants you could combine them when you bring them in sizzling. Grab a beer or margarita. Make some salsa, onion + tomato + cilantro + jalapeno + lime juice. Grab a beer or margarita. Gauc. - advocado + salt + garlic powder + lime juice, or just advocado. Sour Cream. Cheese. Heat tortillas in the oven as above or microwave in a paper towel for a minute. Grab a beer or margarita and grub. |
