I also love marquesitas and have eaten many over the years. They are made with very sweet, crisp crepes rolled around shredded Edam cheese. I think the hardest part would be duplicating the crepes. I have made many crepes myself, but do not know how to make them that crisp. They are almost like the cone used in waffle cones, only much thinner.
