I think technically the name is Taco Paco.

Paco is from Guadalajara so I think he has a bit of Puerto Vallarta influence in his tacos. They just have a bit more love in them than most other shrimp and fish tacos around here.
I dig the chipotle sauce. That's the other great thing. He's got quite a few sauces to choose from.
