Favorite Recipes

Looking for appetizer recipes that are delish,cold,eaten with one hand & will not go soggy.Thanks for sharing,Necie

Tortilla Roll-Ups

16 oz. cream cheese
1 bunch green onions with tops, chopped fine (not an onion fan so I omit)
4.5 oz. can, chopped black olives (optional)
12 large flour tortillas
8 oz. sharp Cheddar cheese (or more)
4 oz. canned chopped green chiles, undrained (I might double this, personally)
Salsa

Let cream cheese come to room temperature and blend with sharp cheese,
onions, olives, and chiles. Spread over tortillas and roll up. Place seam
side down on pan or plate and cover with slightly damp towel. Cover with
plastic wrap and refrigerate until firm. Slice on the diagonal into 1-inch slices and serve with the best salsa.

You can really vary a recipe like this one by adding different things. I like to chop my cream cheese into 5 or 6 pieces and put each one in a different bowl.
I add honey mustard and ham to one (maybe some onion and ranch dressing)
chopped beef and horseradish to one (again, some onion or other salad dressing)
salsa and grated cheese to one (can add hot peppers too)
lots of finely chopped veggies and ranch dressing to one.
You can add just about anything you have in the fridge. I roll my up in saran and just bring them out shortly before serving. I have used every kind of tortilla too to add color to my tray.
