vegetarian and kosher food options

I will be travelling to Playa w/ a vegetarian, as well as someone who keeps kosher.(no pork, only certain cuts of beef, no dairy and meat together in the same meal, no shellfish, although fish is ok) I guess I am looking for restaurants w/ vegetarian options (all veggie is fine as well). How prevelent is the use of lard(pork fat) as a cooking oil. Any thoughts on items that would seem kosher, but have hidden pork in them?

A lot of Mexican dishes contain manteca, or pork lard. You're probably right in that you'll have to stick to Vegetarian restaurants. Avoid refried beans if you're unsure about them.
