Congratulations!!! I have never won a contest. Unique probably is along the same lines as original. Char's recipe is looks good. I have one that I really like, but I am going to make some modifications to mine based on Char's chili.
Gawd! I ordered chili at Chili's today. It was awwwwful. I got this freaking thick red gravy-like concoction. No beans! WTF?! I ordered a side order of black beans to dump into the bowl of whatever. Still...ewwww.

I got soooo sick from a bowl of Chili's chili over 20 years ago that to this day I cannot stand the sight of it... and it's in their queso that all the boys in this house love... ugh...

hey, maybe that's where my anti public chili thing stems from...

I know sister...that is what I get for venturing to the dark side and having what Char calls "public chili." I like mine the best....but after reading your recipe, I know I could devour a bowl or two of that veggie chili.

It was so disgusting. I didn't complain because we go there all of the time. I had ordered a dinner salad...so I was fine. But after tasting that, I swear I am never having their queso again. When I tasted it, I figured out that a version of that stuff was their queso. OH GOD...

Bonnie, I will post my favorite veggie chili recipe for you. I LOVE it, but Michael won't allow me to make it for him, since in his (stupid) opinion () it's not chili without meat.

Everyone who ever eats it says it's the best veg. chili they ever had.

¾ cup olive oil
2 zucchini, diced
2 onions, diced
4 cloves garlic, minced
2 large red bell peppers, cored and diced
1 can (35 oz) Italian plum tomatoes, with their juice
1.5 lbs ripe plum tomatoes, diced
2-3 TBS chili powder
1 TBS ground cumin
1 TBS dried basil
1 TBS dried oregano
2 tsp ground black pepper
1 tsp salt
1 tsp fennel seeds
½ cup chopped fresh Italian parsley
1 cup red kidney beans, drained
1 cup chick peas (garbanzos), drained
½ cup chopped fresh dill
2 TBS fresh lemon juice (I have substituted lime and it’s ok)

1. Heat ½ cup of the oil in a large skillet over medium heat. Add zucchini and sauté until just tender, 5-7 min. Transfer zucchini to a dutch oven.
2. Heat remaining ¼ cup oil in skillet over low heat. Add onions, garlic, and bell peppers. Saute until wilted, about 10 min. Transfer mixture to the dutch oven, along with any remaining oil.
3. Put dutch oven over low heat. Add canned tomatoes and their juice, the fresh tomatoes, chili powder, cumin, basil, oregano, pepper, salt, fennel seeds, and parsley. Cook uncovered, stirring often, for 30 min.
4. Stir in kidney beans, chick peas, dill, and lemon juice. Cook for another 15 minutes. Stir well and adjust seasonings to taste.
I serve it with sour cream, grated cheese, and chopped scallions on the side. And lots of hot sauce, too.

This came from one of my favorite cook books, The New Basics. I’ve made this many times with substitutions for items I couldn’t find and it always turns out great (but without the fresh dill, I don’t like it as much, which is too bad since I can’t find fresh dill here).

haven't read through the whole thread but there are lots of good chili recipes here. the last couple of batches i've made for friends, i've added some canned chipotles. or you can add just some chipotle sauce to individual bowls - or both. it really kicks it up and tastes great.

One thing I can tell you for sure is use something like round steak and cube it with some ground sirloin. After letting it simmer for 4-5 hours those cubes of steak will be TENDER and it gives the chili a whole new texture. This type of chili has won our work chili cook-off 4 years in a row and it's the only way I make mine now.
