I need a chili recipe!

This weekend Logans preschool is having a fall hoe down and they are doing a chili cookoff. They dont have many people signed up so they were asking if some of us planning could make up a batch to bring in. i have no problem making some but Ive never done it and dont have a recipe. Anyone have a good one thats not going to be completely overwhelming to a first timer? I do well with cooking new stuff but Im also running one of the craft tables so Im going to be really busy in the days leading up to it. Thanks!

OK, here's an easy Chicken Chili I like, feel free to spice as you like.
Chicken Chili
Ingredients
1ounce virgin olive oil
1 medium yellow onion, chopped
1 medium green pepper, chopped
2 cloves garlic, minced
2 pounds ground white meat chicken, or diced chicken breast
¼ cup + 1 tablespoon chili powder
1 ½ teaspoon dried leaf oregano
½ teaspoon ground cayenne pepper
½ teaspoon garlic salt
½ teaspoon ground cumin
½ teaspoon fresh ground black pepper
42 ounces peeled canned tomatoes, chopped
23 ounces canned tomato sauce
6 ounces tomato paste
2 bay leafs
8 ounces water

Method of Preparation
  • In stockpot sauté the first 5 ingredients until the chicken is done and the vegetables are soft.
  • Add the dry ground spices and cook for about 5 minutes stirring to incorporate well.
  • Add remaining ingredients, bring to a low boil, then lower to a bare simmer and continue to cook for about 1 hour and 30 minutes, stirring as needed to prevent sticking.

You peeps are making me hungry. I love white bean chicken chili. There is a good recipe on foodnetwork.com. Plus a lot of others.

I made this for a competition....didn't win, but ours was gone long before anyone elses.....what does that tell you? Tastiest chili Ive ever ate.

The Best Chili You Will Ever Taste


This is the best chili recipe I have ever tried. I'm not sure where the recipe originated, but it is amazing! Sometimes, I don't bother adding all four cans of the kidney beans and it still turns out wonderful. Once anyone tastes this chili, they will be begging for the recipe!! Enjoy!

6-8 servings


2½ hours 30 min prep


2 teaspoons oil 2 onions, chopped 3 cloves garlic, minced 1 lb lean ground beef 3/4 lb beef sirloin, cubed 1 (14 1/2 ounce) can diced tomatoes 1 can dark beer 1 cup strong coffee 2 - 6oz.cans tomato paste 1 can beef broth 1/2 cup brown sugar 3 1/2 tablespoons chili sauce 1 tablespoon cumin 1 tablespoon cocoa 1 teaspoon oregano 1 teaspoon cayenne 1 teaspoon coriander 1 teaspoon salt 4-15 oz. cans kidney beans 4 chili peppers, chopped

  1. Heat Oil.
  2. Cook onions, garlic and meat until brown.
  3. Add tomatoes, beer, coffee, tomato paste and beef broth.
  4. Add spices Stir in 2 cans of kidney beans and peppers.
  5. Reduce heat and simmer for 1 1/2 hours.
  6. Add 2 remaining cans of kidney beans and simmer for another 30 minutes.
Cook the day before and let sit in the fridge overnight so flavors blend together. Reheat before serving.

Chili is so easy!

Mix this all in a big pot!!

*Cooked Ground Beef (brown a pound or so depending on size of pot)
Green pepper, Onion, a clove of garlic, Mushrooms (cook the veggies in with the ground beef in the pan after the beef is cooked)
*Small can corn
*Can of diced tomatoes
*Big Can Brown Beans
*Big can Kidney Beans
*If it is still too thick add some Spaghetti sauce or tomatoe soup...keep in mind it will thin as it cooks a little....
*Chili pepper to taste
*Salt & Pepper to taste.......

I usually let it simmer for a few hours at least then throw in the fridge overnight!

Can ya believe NERAK is responding to a recipe request thread??

I have a super easy recipe (with beans), straight out of my Betty Crocker cookbook that I got for Xmas in 1979. I made it a couple of years ago for a football party, and it was such a hit, I had to make a double batch for the Superbowl party that year.

I'm also making it for the Pats/Colts game this Sunday (we're calling it "Superbowl Lite"). One of my neighbors is having a party, and that's what I'm bringing.

So.... if you're interested, drop me a PM, and I'll PM you the recipe. And you KNOW it's easy to make, cuz if NERAK can make it, ANYONE can make it.
