I just got this in an e-mail, seemed right for this thread

We will be at the MIL's place for homemade Italian meatballs which we are making Friday night. This will be the first time making them since the FIL passed away two years ago. Of course the meatballs will sit on homemade pasta and will be covered with homemade gravy. It’s an Italian sauce that I am told is NOT spaghetti sauce.
We take turns every year going between four places, when at our house we have filet mignon and lobster tails, the SIL has prime rib, the other BIL's wife is a horrible cook and we get packaged crap. ![]() Of course the two of us leave it all behind on the 26th for PDC. ![]() ![]() ![]() ![]()

Please don't share this with anyone...![]() This is a really simple dish. Goat Cheese Cream: -1\2 Yellow onion diced small -1lb. Goat Cheese -1qt. Heavy Cream -1 pinch ground Nutmeg - Salt & Pepper to taste *Sauté diced yellow onion with a little oil & pinch of Nutmeg, until onion becomes translucent. Add the heavy cream and bring to a slow simmer. Gradually fold in the Goat cheese until the mixture becomes smooth. Remove from the heat and add salt & pepper to taste. ( Cream sauces always develop more flavor the day after they are made, so I recommend making this the day before you plan on serving) Cauliflower: -Cut cauliflower into crowns (Bite size pieces) -Toss cauliflower with olive oil, salt, & pepper -Roast in the oven @ 350 degrees for 10-15 min. or until the cauliflower begins to brown on top *Slowly reheat the Goat Cheese sauce and simply pour over the freshly roasted Cauliflower and serve. |
