Ribs

James has a good recipe, I believe. I will tell you how I do mine.

Smal charcoal fire, soak wood chips in water for at least an hour. Put part of the wood chips on the hot coals. Cover. I have used a Weber grill and a barrel type water smoker.

When the smoke stops coming out, put more wood on the coals. Add a few coals from time to time. Do not put the ribs directly over the friel Cook for a long time (several hours)

Remove ribs. Pour half a bottle of beer in the bottom of a crockpot. Pour bar-b-q suace over the ribs. Cook on low for an hour to whenver you are ready to eat them.

That's it. For pork ribs I customarily use hickory, apple, mesquite, or maple. I have read that wood from coffee trees gives a good flavor. Nut trees, particularly pecan are supposed to work well also.

Its sounds like a fine art how you make those ribs.
I do not have a smoker,can I do the first part on a barby?....di 8)

what kind of barby is it? If it has a cover with air vents that can be adjusted, the answer is absolutely.

BBQ

Unfortunately its gas but it has a very low, slow burn on one side & I usually vent it with tongs,to hold it up slightly......is this bad?...di 8)

Nope, not bad. There are little metal trays you can get to put the woodchips in to create the smoke. There are also little wood pellets you can buy to put in the little metal trays, but small wood chips will work also. In the case of a gas grill, I don't think you will want to soak them in water, the little metal tray keeps them from burning too rapidly

Roni's ribs are similar to my own...except that I BBQ mine in a special sauce I make....actually there are two...one a sweet/sour tpye. and the other a smokey/robust sauce....I love cooking, and from all come and partake, I guess my ribs and chicken are my best dishes....How can you go wrong with ribs though???? They are always great...
JAH...Your supper sounds great!!! Although I would pass on the rice...haha
A hint to any that might want to try it....I brought home some dried Anjo peppers...and for a fish dish, soaked and lightly boiled them with lemon, cilantro, and garlic to make a light glaze...Wow...was it nice!!!
Di, There are small "smoker" pots you can get at Cdn Tire, etc. that you can use on your bbq. I used one for quite a while before I built my smoker.
Roni....Wish we could get the woods you speak of here....the chips we can buy are priced beyond what you can believe....To be able to smoke continually with apple, hickory, or any of the flavor filled fruit woods, would make me a happy man.....OK cooking 101 is over

Lets get together

Now if we could all get together & have these fantastic ribs & chicken.
Something wrong here in my house I do the cooking & the BBQing,I am thinking here, that we women invented the BBQ for men,did we not?
Can we all get together either here in Vancouver or better yet in PDC area & have this fantastic sounding food?
In case the answer is NO,thanks guys for all your help I sure will try it here,but lets think about getting together...OK.......It would be neat to meet the group on here,I keep missing them somehow when I am there.......di 8)

Thanks for the url's. Now I have to figure out how to get all those nice woods up here... About the best we have here is birch...and the chips we can buy are nuts for price...I may have to come down to that beautiful state of yours, and bring some back.
Di, a great idea, and you can be sure we are going to make it out there to visit when we can. Maybe in August.

Vancouver is not far from Portland, and since Kathy's (my wife) firm looks like it is going to go belly up Real Soon Now, a train to Vancouver is considerably less expensive than a trip to Playa.
