Recipes for good food
I cooked a fish veracruzana tonight with a recipe I found on the web. I did not follow the recipe exactly. It called for a particular brand of salsa, and I used an organic salsa made locally. It called for pickled jalapeno pepper and I used a fresh one.
It was a keeper, as far as recipes go. For more lime flavor, when you add the fish to the pan, pour the lime juice in with it. For less lime flavor, pour less lime juice in. For minimum lime flavor, just put in the fish that has been soaking in lime for at least 20 minutes. Kathy says it is a keeper. Oh, here is the URL Ron |

Sunday night I'm having guests for dinner! You're all invited!
Here's what I'm cooking: Sopa de ajo con huevo escalfado (Garlic soup with a poached egg) Bolillos (Mexican hard rolls) Ensalada de pina y jicama (Pineapple jicama salad) Estofado de pollo (Chicken stew with Spanish influences) Arroz (Rice, I prefer brown, so that's what we'll have) Pastel de tres leches (Three milk cake) Cafe con o sin Chocolate Abuelita (Coffe with or without chocolate and cinnamon) I'll be thinking of y'all! |

My recipe comes from Susana's Trilling's book SEASONS OF MY HEART. Susana has a cooking school near Oaxaca which I have attended. I'm sorry, but I'm afraid that to put it here in public domain would be an infringement of her copyright.

Now can you do me a favour & tell me the names of the 3 milks in Mexico.I had them one time but not now,I used them for Pan de limon.I think they were all Nestle Brand.........gracias.....di 8) |

I work next to Barbara Jo's Books to Cooks in Yaletown & checked for the Seasons of My Heart Cookbook. Although she didn't have it, she does have a small collection of Yucatan cookbooks which looked good. I'm going to try the Fish Veracruzana this week-end but with homemade Salsa. (I'm allergic to onions, if you can imagine). |

MoonDance, let us know how the fish went for you.
I may cook it this weekend for company, but I am leaning toward some slow-cooked smoked country-style ribs. After smoking them at low heat for about 5 hours I put them in a crock-pot with some beer and semi-sweet bar-b-q sauce (on low) for a couple of hours and they are sooooooo good. Ron |

Ribs,my all time fav food in the whole wide world!!!!!
Boy these sound so awesome. Any secrets here or is this all to the recipe....1 bottle or can of beer & bbq sauce? I never can find good ribs here,only in Mexico & I never seem to be successful with them either & I think I can cook almost anything..........di 8) |

I am very partial to ribs at Ronny's when I am in Playa. Here at home, I wait for my youngest son to get around to them. He's good at that.
Back to Susana's book. It is available on Amazon, and she also made a multi-part PBS series at her cooking school. I've never been able to catch it on our local station, but I think I'll buy the tapes from her when I'm back there this fall. |
