I also traveled AeroMexico from Guadalajara to Cancun and it was a very pleasant flight. Comparable to United or American, I'd say. It looks like they have a wide range of aircraft in their fleet. I guess you'd have to find out which aircraft they use for your flight.
Do you get mariachis, too?

No, but they throw a sombrero on your head and then try to sell you $10 picture on a Corona bottle in an effort to offset fuel costs.

AeroMexico es the largest air carrier in Mexico, the other one being Mexicana.
As mentioned, their planes range from small to wide bodies, but for a long flight from Canada to Cancún, at least you get a Boeing 737.

You still get food and drinks and that is a plus of course.

Which airport are you flying out of? I don't sea a route to Toronto.
If you are using it as a charter, the service on board may differ, depending on the customer who is buying that day's flight.

Jesus, yes it is a charter flight out of Lester B. Pearson Airport (Toronto). Non-stop from Toronto to Cancun.
