Recipe suggestions for skinny chickens?

Since I eat LOTS of chicken breast, I was really happy to stumble across some drastically marked-down packages of it the other day - $200 pesos worth for $60 pesos! (Which is about 2.5 kilos which is about 5.5 lbs for $6 US).

Anyway, the "catch" is that it's what they call "milanesa" meaning it's sliced down to about 1/4 inch thick. Down here, they just throw it on a grill with lots of oil/lard and fry it up quick (usually a bit overcooked and dried out), however, that is not exactly on my diet. Most recipes I find are breaded and fried, which I wanna steer clear of too.

Can you come up with a way to roll it or stuff it with something healthy or casserole it or otherwise make a tasty, healthy dish out of a good portion of it?

I've got 15+ lbs of it... I better find a way to love it!

I made some a while back, filled with a bit of Alouette light spreadable cheese with garlic and herbs, and some lightly blanched, chopped broccoli. Rolled it up and I admit I did dip it in beaten egg and rolled it in ground dried wheat crumbs and baked it. It was yummy.

Marinade it (olive oil, garlic, bay leaves, chillies, Worcestershire sauce, a touch of tomato puree, salt and pepper) grill it, cut it in strips, make some pico de gallo (you can add tomate machacado to it so as to make it juicier, and also some capers or chopped olives) and make tacos.
Add a dressing made of mustard, olive oil and orange juice and you're laughing.

As a casserole dish, why not try it as a fricasse? Want my recipe?

Hmmmm...the first thoughts that come to mind are:
  • roll it up with some ham and swiss cheese and bake it for a quick cordon bleu
  • make a stuffing of spinach, garlic and mushooms to roll up and bake
  • slice in smaller bite size pieces and sautee with veggies and soy sauce for a quick stir fy
  • "bread" them with parmesan instead of bread curmbs and bake, then top with no sugar added spaghetti sauce for chicken parmesan
  • marinate in a good mesquite type marinade and throw it on the grill, then keep in the fridge for quick add-ins to salads
  • slice it up and throw it into your favorite tortilla soup recipe
Any of this sound good at all?

I think I remember Laughing Cow as a fav...why don't you roll a wedge of that and some veggies...spinach, tomato, asparagus, or a combo...think asparagus sounds the best to me

Do this:

sautee in olive oil (or veggie oil or whatever) - in a pan big enough for the following ingredients

1 medium onion :
add some cloves of garlic
cut 1/2 kilo of the chicken into pieces or shred it or whatever and toss it in with the other stuff.

Add 1 tablespoon chili powder (use something similar to the kind you can get NOB)
1 teaspoon of ground cumin
other spices you may like (salt pepper, powdered habanero, chipotles in adobo sauce, fresh hot peppers, whatever)

When chicken is cooked, add

16 oz. can of diced tomatoes (or its equivalent in Mexican canned diced or fresh tomatoes)

a 16 ounce can of some kind of beans, drained and rinsed (I often use black beans, but it doesn't really matter)

1 cup of chicken stock.

Let it all get hot. Makes about 4 1-cup servings. Eat some, refigerate or freeze the rest for later.

Tasty, healthy and good for you. South Beach Phase 1 compliant if anyone cares.

Play around with ingredients and seasonings.

Oh, I'd still like that BBQ sauce recipe

Try this ( normally its done with veal, but as I only eat chicken, I do it with chicken!): lay the checken breast flat, on top of it put 2 slices of PANCETTA ( or bacon, but pancetta is better...), a leaf of SALVIA and a slice of cheese...roll it all, and close it with a toothpick. Cook it in a pan with a little bit of oil, and a small piece of butter, and rosemary leaves....YUMMY!!!!!!!

Not sure how readily available these ingredients are for you but ...

4 – chicken breasts, pounded and flattened
1 pkg frozen spinach, drained of all liquid
1 package mushrooms, sliced or chopped
3 cloves garlic
1 bunch green onions, sliced, from white tips, into the dark green
4 ounces feta cheese
1 tbsp olive oil
Paprika
Garlic Powder
Onion Powder
Salt & pepper


Using the back of a large spoon or meat tenderizer, pound & flatten each breast without splitting them
In a medium skillet, sauté the garlic, mushrooms and green unions until tender
Add spinach and drain all liquid from ingredients
Add the feta cheese and salt & pepper to taste and mix
Sprinkle one side of each breast with a little paprika, garlic powder, onion powder and salt & pepper
Then Place about ½ cup of mixture on each breast and spread over the breast
Roll the breasts up, and keep closed with a toothpick if necessary, and place on a baking sheet
Then once each one is rolled, again, sprinkle each with paprika, garlic powder, and onion powder – don’t do the salt again, might be too salty
Bake at 350 for about 20 minutes or so, depends on thickness of breast, check after about 20 minutes
