I would do a BBQ....Maybe Salmon & Chicken? Costco has good prices on both....Then put out a bunch of salads, chips, salsa & guac......I did a cool fruit salad one time in a hollowed out pineapple....Maybe a self serve taco/nacho station?
Keep it simple.....You want to have fun...
