Yum, Mojitos are one of my favorites...but what I have also made (quite a bit for pool time on the weekends) are Tequilajitos....trust me on this - YUM! I found the recipe in Southern Living and if you are interested here it is (this is the doubled amount because pool time lasts quite a while
):2 cups water 1 1/2 cups sugar 2 cups mint leaves, packed 4 cups lemon lime soda 1 1/3 cup tequila or more! Make the mint simple syrup the day before. Put water and sugar in saucepan over medium heat and boil, stirring until sugar dissolves. Remove from heat and add mint leaves. Let stand 2 hours to cool, stirring every once in a while, then put in refrigerator overnight). Strain syrup into pitcher, pressing on mint to get all of the syrup out. Add lime juice, soda and tequilla. Serve over ice. ENJOY! |

I always used to use simple syrup when making mojitos until I began watching a favorite bartender on Cape Cod making hers by muddling mint, spoonfuls of raw sugar and a little warm water with a sort of (Japanese) mortar & pestle. I got one and it worked so great that that's all I use now.
