I like pickles chopped up in my chicken salad. Red grapes cut in quarters is nice too.

You're half way home. More veggies if you like 'em. Lettuce, onion, sliced cucumber, etc... Would compliment nicely. Shredded cheese of any kind. If you mix a bit of lemon or lime juice with the mayo it zips it up some. Or even a small bit of italian dressing mixed with the mayo would be good. Basically, and chicken salad in a pita.

Oh grapes and almonds in a chicken salad is great!

Might go with a tart apple and some raisens or red onion and sliced grapes, good mayo and a dash of dijon.

last time i had some nuts in there, walnuts i believe, and that was good... didn't have any this time...

i did dill relish (faster than chopping pickles!) and some garlic salt and mayo and bell pepper with the chicken... then a small bowl of shredded cheese and another bowl with shredded lettuce, tomato, a splash of zesty italian and some parmesan on top... it was tasty, but cukes, nuts and/or celery would all have been good

methinks meneeds a grocery run

Sounds great to me the way you have. I am a (cook what's on hand kinda guy.) Inventory the kitchen and adjust to what's there. Nothing ever turns out quite the same way twice. But mostly good. Fresh salmon chowder last night from 3 grilled salmon steaks in the fridge. Turned out great.
