This is my DIL's Corn Souffle recipe. It's so simple it's ridiculous, and it's wonderful. I've never met anyone who didn't want it

Corn Souffle

1 can creamed corn
1 bag frozen corn (You know, the bigger than a box bag)
1 stick melted butter
1/2 package saltines ("package" means one of the stacks of saltines in the box)
2 eggs
salt and pepper to taste

mix everything together in a bowl. If you can stand it, do it with your hands, but a big spoon works fine.

Place in a casserole. Bake at 350 1 hour.

People still eat that??? Try this one, instead.

Caramel Apple Salad

1 12 oz cool whip
a sm box butterscotch instant pudding
4-5 red apples, chopped
1 small can crushed pineapple, drained
½ c chopped dry roasted peanuts

Mix pudding and cool whip together, then add remaining ingredients. Serve that day

(It's even possible to make it sugar-free!)

It is no secret I love PDs recipes -
but I always cut back on the butter and sometimes forget the cheese.

This is a no fail recipe - it always comes out good.

Ingredients

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar
Directions
Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

I looovvvve sweet chili Doritos. Wavy Lay's and the new Lay's Carolina BBQ potato chips, and Cheetos are the other types of junk food to which I am addicted.

This is my youngest daughter's favorite salad - I make it every Thanksgiving and Christmas, but we use cut up Snickers bars now instead of peanuts.

What's really sad is that now that I've become a bit more conscious of what I'm putting in my body, I am at least peaking at labels of things that I eat regularly that I never really was totally aware of before.

It's scary how many packages, specifically canned foods and snack foods, are considered to contain multiple servings per the nutrition label.

It still doesn't stop me from eating the whole thing though...

Totally.....soup cans....notorious for having 2 servings in one can. I can eat a whole can of tomato soup...slurrp.

It's all advertising spin!

"Only 100 calories per serving!" (serving size: one half of one chip.)

Just tell me what the total package contains and I'll decide for myself.

And yes, I get pissed when I buy those (serves 4) meals and there's only enough for me. That means... I will make sure the family gets fed, and I will make a sandwich. I woulda made "2" packages if I knew they were so small.

Not only do they still eat it, they bitch if I DON'T bring it! I remember making it in the eighties.

That sounds okay, other than the peanuts....too many peanut allergies these days.

Thanks Tappy and leeds for those, they both look really good.

I have to say Tappy's has the edge, though (assuming I could find corn muffin mix here!)...the saltines reminds me of making that apple pie in chemistry class that had no actual apples in it...anyone else do that experiment in high school?

And no, you don't want to learn the numbers of fast food shakes. I still cringe a little every time I order one. But I still order them
