I don't consider El Fogon to be a changarro/hole in the wall anyway either. Both places would be at the low end of a price scale, no big difference really, one has an ocean view, plasma screens, and the coldest freakin' beer in town, served in frozen mugs. One has hardwood tables and chairs, the other plastic seats and tables. It's a different experience, for sure.
I don't think Alejandro should have stolen his grandma's salsa recipes, but I'm glad he did. They are the best in town, IMHO. You don't pay extra for salsa, they'll give you your choice included. If you want a plate of salsa boats with chips, you'll pay a couple bucks for that.
One battles it's competition for the lowest priced al pastor in town, the other battles all comers for the best quality al pastor in town.
On Pastorcitos, I know the family that runs this place. I usually go there instead of El Fogon when I'm eating in my neighborhood. We had our get-together/greet/meet dinner before our wedding there.
