Pork Recipe Needed - Pictures Added

I have a 4 pound boneless pork loin defrosted in the fridge.

What would you do with it? Crockpot? Roast it? Rotisserie? What seasonings?

I'd like to use some of it, if not all of it, for shredded pork tacos...

get a couple pounds of lard and boil the pork in the lard until it's golden brown (on medium heat). Serve with corn tortillas, chopped cilantro and onions and a salsa verde.

Chile Verde

Ingredients:

Pork Roast
½ Sliced onion
2 large cans Las Palmas Green Enchilada Sauce
2 small cans Ortega Diced Green Chiles

Cook pork roast. Shred meat and remove any fat

Pour a few Tbs. oil in large pot and heat. Add onion to oil and sauté. Add
the Las Palmas Green Enchilada Sauce, green chiles cover and heat. When
heated add shredded meat and simmer.


Serve with Mexican Rice.

Rice

2 cups rice
1 can chicken broth
1 can El Pato sauce (yellow can) found in Mexican food section

Heat oil in pan, add rice and brown. Add chicken broth and El Pato sauce.
You may need to add a few cans of water (use the El Pato can).
Add garlic power & salt to taste, cover and boil. Once liquid boils
turn flame down to low and simmer for approx. 25 minutes.

Isn't a pork loin an awfully good piece of meat to be used in recipes that generally use cheaper cuts? Seems like a bit of a waste. Why not keep it simple. Bit of salt and pepper and roast it. Maybe a glaze at the end, like the apricot as suggested, or orange marmalade, or the like.

sctx usually spices it and then throws it on the smoker for a few hours. Smoke a little pineapple and assorted veggies and your done and it is easy!

Welllll...it WAS on sale....and I've done the roat pork loin a million times. I'd like to try something different.
