1 week from today we will be on our way to Eugene. Our flights were changed, we will now be in Portland for a 3 hour layover, instead of the originally scheduled 2 hours. They also changed our return flight. From 4:28 pm, to a 7:00 am flight. I called Orbitz and after waiting for about 1 hour they were finally able to get the authorization from United to change my flight. Now we leave Eugene at 5:30! Yay!!

The salmon came out of the smoker at 3:00am. Check that one off the list.
Beer done, pepper jelly, assorted wine salamis, ready... Need to get some cheeses, veggies, fruits, and baguettes and the party bus food is complete. I also picked up nice little wild caught coho yesterday for the grill. I can't decide if I want to cut steaks, fillets, or cook it whole. Hmmmm. Decisions decisions... Bar set, patio furniture, canopy, speakers, bocce set, crocket set, stacked up and waiting. Eggcelent. It's all coming together nicely. |

Alaskan Pink salmon is crazy cheap right now too. I'm thinking of picking up a few pounds that too and poach or bake it in advance. We could use it to make salads, spreads, patties, or mix with eggs in the morning, etc... (Roni will have lots of ideas for this.)
So we will have smoked coho salmon for the picnic, a whole coho to plank grill for a dinner, and some precooked pink salmon for whatever. That otta cover the salmon lovers for the weekend. |
