No disasters with the jello cake (one side sloped a little in the pan, but not too noticeable). It's chillin in the fridge and looks pretty good. I was wary about pouring that liquid jello all over a freshly baked cake, but it sort of "sets" and was not saturated after about an hour in the fridge. Will report back on the taste after everyone digs in later.
After consulting with friends about the Cool Whip v. handmade whipped cream, the consensus was that whipped cream is not great as a frosting substitute and will "deflate." It's better as a topping; i.e. strawberry shortcake. I opted for the "extra creamy" Cool Whip, which contains "real cream" as a compromise. I mean, why am I worried about weird ingredients when I'm pouring jello over the damn thing? Er, the darn thing. Happy Easter!

Put the ham on the Brinkman smoker this morning after rubbing it down with some horseradish mustard.
I cut some chunks of apple wood off a branch I had cut off of the tree a couple of weeks ago. Smoke is coming out of the smoker, having embraced the ham on the way out. I think this is going to taste all right. Will have some roasted veggies with it. |

It is a BEEEEE-YOU-TI-FUL day in Tampa!!! Sunny, no humidity, a light breeze and 76F. AHHH! I'm spending my time between being up on the roof pruning the creeping fig off the chimney and wathching the Tampa Bay Rays game.....they beat the Yankees on Friday and Saturday!
We're hoping for a sweep! GO RAYS!Mike's grilling beef and chorizo burgers later in the afternoon. We'll be having those with a strawberry and spinach salad with homemade strawberry vinegarette. Yum! Not your traditional Easter meal, but it's only the 2 of us and we already had ham slices last week....
