Summer Olympics party--I am Mexico....

I am representing Mexico at an opening of the summer Olympics party on July 27. That means I am to dress in Mexican clothing and bring Mexican food and drink. I am thinking of my recipe for enchiladas and shrimp ceviche. I have never made ceviche before, but instead of looking to online recipes, I would like a truly Mexican recipe. Anyone have one?
Also, what do you suggest I wear? I will be in Playa next week (May 5-13), so I can get clothing then.
Thanks, and if anyone has any other cool ideas for representing the country of Mexico, bring them on!!!

I was taught my Nora at Mom's to make ceviche. Of course, no recipe but lots of lime. And when you think you have enough, add more! LOL! Lots of garlic. Tomatoes, onions, peppers, salt and pepper, cilantro. Stir until you see the shrimp change color, let sit a couple hours. She also chops habenaro peppers and soaks them in lime juice. Serve on the side for those people who like it hot.

This is going to be the coolest party ever!! The hosts are representing England, the host country of the Olympics. Every couple or single person attending got to choose a country and they then bring the fixings of that country. I think this is the best party idea ever!!

dana (uno) has THE best ceviche recipe... damn near fool (fool being me) proof!!! must try... so easy soooooooooo deelish!!

How 'bout Cheladas? Beer and lots of lime juice over ice in a tall glass with a salted rim.
