Compost and fruit and vegetable fibre available

we feel bad throwing out all of the orange, banana, melon and lime peels everyday. anyone interested in collecting them for a compost? we also throw out the fibre collected after extracting juice from carrots, pears, apples, beets, jicama, ginger, celery and cucumber. we usually use this only once a week to make fruit bread but it is too much for just the two of us.
