If you walk the roadway south of the Tulum Ruins, I believe Mar Caribe is maybe the second driveway south of the El Mirador entrance. (El Mirador is the very first place south of the ruins). If you're walking from El Mirador along the beach, the beach bar at Mar Caribe is the first place south that's actually up near the water.
As for Gringo Daves, hopefully someone will lease the property and take it to new heights. It'll be unfortunate if that someone is an all-inclusive. In the meantime, there's always Diamante-K or you can head down the road to Zamas for an equally interesting view.
