Thoughts on Excellence Riviera Cancun? Other suggestions?

Ive never been to an AI in Mexico. In fact, I have been rather opposed to them. But..I'm tired and I'm stressed and I just want to relax while I gorge myself on food and drinks.

We are looking for June or July and our budget for 5 nights is around $2000. We will stay a few night in Playa afterwards, so proximity to town doesn't matter.

Here is what we want:
-above average food...food is really important to us and a big part of why we have avoided AIs
-I do not want to have to eat from a buffet for both breakfast and lunch...in fact, I would prefer to never eat from a buffet
-high end liquor
-good beach, no sand bags
-preferably no reservations for dining or bracelets (but not a deal breaker)
-no kids

Excellence Riviera Cancun is popping out as perfect for us (well EPM would be my 1st choice but its much more expensive), but I admittedly haven't done a ton of research. Looks like VIM, Royal, some the El Dorados are in our price range too. Any thoughts or other suggestions?

We did love the VIM. Has everything on your list. A bit of walking but very enjoyable. Out of the 50ish different AI's we have stayed in it's in the top few for sure. Food was great, as well the staff, and the beach is Awesome!

VIM isn't bad. A little large, perhaps, but the food is good. The large pool there is kind of weird to me because there are so many rafts, the pool is full of people just pushing them around. It's a bit of a traffic jam.

If Exellence RM is anything like Excellence PM, it's nice. We stayed at PM a couple of years ago and it was one of the prettiest resorts I have been to. Plus you actually get liquor bottles in your room!

Excellence RM was on our short list for June, but we ended up going with El Dorado Casitas Royale. Never been, but looking forward to it. It's hard to go wrong with anything that is Excellence, Secrets, or El Dorado, in my opinion.

Edited to add:
Expect breakfast at a buffet...most resorts have an a la carte option, but usually not one that has an extensive menu.
I have not been to an AI (except for Maroma and in Cancun) that has a beach as pretty as the one in town. I guess there is a reason that Playa popped up where it did...the sand is whiter and the sea is bluer here than at any resort I have been to between Cancun and Playa.
All the resorts you mentioned will serve you good liquor if you ask for it. Excellence has liquor in the rooms, but only high end liquor in the Excellence Club rooms (but high end liquor throughout the resort for anyone).
No reservations are needed for dinner at any of the places you mentioned, and NO KIDS.

Its a bummer, but its ok as none of them were really suiting us anyway. We had issues booking flights with Southwest points, so we have to pay for flights which takes from our overall budget. I think we may just do one of the cheap AIs in Playacar and eat out a few nights. At least i know the beach will be nice!
