We have been deep sea fishing at Akumal, it's actually inshore fishing (they don't go out too far unless you request I guess). We just booked by talking to a captain on the main beach there when the fishermen came in the day before.
Don also booked a guy who 'parks' his panga near the Gran Porto Real (do the panga fishermen still park there?) Caught a sierra mackerel and other assorted small fish.

Not really any fly fishing around Playa except down at Boca Paila or especially Punta Allen (tarpon, permit, and bonefish.) They are quite far south of Playa, south of Tulum, google the names for more info.
Don has brought a surf rod and fished in the surf a few times in Mexico, never had much luck (and he was only fishing around rocks). The locals who surf cast have much better luck, and all you need for that is some line and a hook.
